EVLovesNYC's Cafewal project, running since October 2024, has entered a new, exciting stage. We've moved into a new East Village kitchen (which we share with our Sunday commissary kitchen). Being in this bigger, more stable location has given us the chance to improve and expand the training program. Instructor, Albert Nguyen — a experienced teacher who is also a veteran of Michelin-starred kitchens — is refining a new curriculum that gives trainees a broad set of skills, keeping a keen eye on the real-life proficiencies that restaurants are seeking.
